Stuffed apricots with pancetta
Ingredients:
3.5 oz. (100g) Landana Goat cheese OLD
16 welled apricots
16 slices pancetta
Extra supplies needed:
toothpicks
grill pan
Preparation Method:
Dice the Landana Goat cheese OLD into rectangles. Slice the apricots open up to the center and fill them with a piece of goat cheese. Wrap a slice of pancetta around each apricot and spike it with a toothpick. Heat the grill pan and fry the apricots for 5 minutes until crispy.
