Stuffed zucchini
Ingredients:
7 oz. (200g) Landana goat cheese CORIANDER-FENUGREEK, diced
2 zucchini, of equal thickness
1 yellow bell pepper, diced
2 tomatoes, seeds removed, diced
2.8 oz. (80g) cashew nuts, roughly chopped
salt and freshly milled pepper
Preparation Method:
Preheat the oven to 200 degrees. Halve the zucchini lengthways and hollow these out with a teaspoon. Mix the bell pepper, fresh tomatoes, cashew nuts and Landana goat cheese. Season with salt and pepper. Stuff the zucchinis with the mixture. Cover a baking tray with parchment paper and bake the four zucchini halves on this for around 30 minutes until cooked.
Great with rice or couscous.
