
Chicken Salad with Landana Olive Tomato
Ingredients
- 150 g Landana Olive & Tomato
- 200 g chicken breast
- 200 g seedless green grapes
- 150 g mixed nuts (e.g. walnuts, pumpkin seeds, pine nuts)
- 75 g mixed salad leaves
Dressing
- 3 tbsp olive oil
- 1 tbsp mustard
- 1 tbsp white wine vinegar
- 1 tbsp honey
- salt & pepper
Preparation
Slice the chicken breast into 2 cm strips and grill them in a hot grill pan until golden and cooked through. Meanwhile, halve the grapes and dice the Landana Olive & Tomato cheese. Toast the nut mix in a dry frying pan until just crisp.
Combine the salad leaves with the grilled chicken, grapes, cheese cubes and toasted nuts. Whisk the dressing ingredients together and drizzle over the salad. Serve with fresh ciabatta and optionally homemade tapenade.
