Marinated cod
Ingredients:
2.6 oz. (75g) Landana 1000 DAYS
1 bottle of dry white wine
2 cloves
Thyme
Bay leaf
Rosemary
Sage
2 onions
Salt & Freshly ground pepper
28.2 oz. (800g) cod (whole)
1.8 oz. (50g) butter
flour
1 dl cream
1 lemon
Preparation Method:
Make a marinade from the wine, the cloves, some thyme, bay leaf, rosemary and sage. Peel the onion, cut into large pieces and add to the marinade. Season to taste with salt and freshly ground black pepper. Bring to the boil, simmering for 10 minutes. Then leave to cool until lukewarm.
Wash the fish, lay in a pan that can be well-closed. Pour the lukewarm marinade into it, possibly diluted with water (if the fish isn’t covered) close the pan and leave the fish to marinate for 5 hours.
Then bring the mixture to the boil, and simmer for 5 minutes. Remove the pan from the heat. Melt the butter, add the flour and make a white roux. Dilute with strained cooking liquid until a creamy sauce is created. Let this simmer gently for 10 minutes. In the meantime, grate the Landana 1000 DAYS and mix this, with the cream, into the sauce and keep warm.
Drain the fish and lay it carefully on a preheated serving dish and cover it with part of the sauce. Garnish with thin slices of lemon. Serve the rest of the sauce separately.
