Cheese soufflé with banana
Ingredients:
7 oz. (200g) Landana OLD
1.7 oz. (50g) butter
2.5 oz. (70g) flower
1/4 l warm milk
4 eggs
freshly ground pepper, white
grated nutmeg
1 pinch of salt
2 Bananas
1 to 2 tbsp. lemon juice
butter for the oven dishes
bread-crumbs to sprinkle
powdered sugar to sprinkle
Preparation Method:
Grate the Landana OLD, foam the butter, mix in the flower and slightly brown it. Add the milk while stirring, bring it to boil and let it simmer for 5 minutes. Remove the pan from the heat, split the egg yolks from the egg whites, stir the 4 egg yolks through the mixture. Add pepper and nutmeg. Mix in the cheese.
Whip the egg whites with salt, mix the egg whites with a whisk through the dough. Peel the bananas, cut lengthwise into quarters and turn it into small cubes. Sprinkle the diced bananas with lemon juice and mix them through the dough. Fat 8 ovenproof dishes with melted butter and cover them with breadcrumbs. Fill the soufflés and bake them in a preheated oven at 200 °C for 20 minutes. Sprinkle the soufflés with powdered sugar.
